Touch.salesforce.com is still 3 or 4 months from being reality. But Salesforce has been quietly adding to the information available about it.
Touch.salseforce.com will be more than an HTM5 interface that will automatically adjust itself to whatever device you’re using it on. Touch is also being used to move Salesforce more elegantly into the future which it clearly sees as “social, mobile and open.”

The first one emphasizes the open and mobile nature of touch.salesforce.com: its ability to work across whatever device you may have.
The second one focuses on its ability to be customized to meet specific requirements. Touch.salesforce.com will not just allow you to take your CRM anywhere you go, it will allow you to take your custom application anywhere you go.
